This is the book you need for the Food & Beverage Operations course. 5th Edition has all of the updated information and it matches the new exam test for your certificate. I highly recommend the book, however it does NOT contain the scan tron sheet that's needed for the exam. I've gone through 2 books on Amazon and they were both neatly packaged and shipped within 2 days of each book, but neither contained the scan tron sheet. That's the only reason why this book gets 4 stars, it would get 5 if the sheet was in it like the previous editions.
